Special Fried Rice
(Khao Phad Sap Pa Lot)
How To Make Special Fried Rice
Special Fried Rice Ingredients:
Enough for 2-3 large portions
1 Pineapple whole
Large Bowl Pre Cooked Rice
2 Eggs
3 Tbs Mixed Sweet Peppers (Bell)
4 Tbs Cashew Nuts
3 Tbs Pineapple (from the whole)
2 Tbs Sweet Corn
2 Tbs Garden Peas (not in photo)
1 slice of Ham
3 Cloves Garlic
1 Tbs Thai Seasoning Sauce
2 Tbs Oyster Sauce
2-3 ts Sugar
1/2 ts Salt
1 ts Chicken Stock Powder
2-3 Tbs Oil
Preparation:
First Slice Pineapple and scoop out the insides, see video tutorial for tips on easy way to do this
Dice up about 3 Tbs of the Pineapple and save for making the special fried rice
Chop and dice all the vegetables and ham finely as per special fried rice ingredients photo above
Measure out all other ingredients as above
Cooking: In deep oil fry the cashew nuts until golden brown and remove, allow to dry
Starting with a hot wok add 2-3 Tbs oil closely followed by the chopped garlic, stir fry until turning golden
Add the ham and stir fry briefly before adding the two eggs to half the wok, lightly scramble before mixing with the Ham and Garlic
Next comes the pre cooked rice (Jasmine preferred) and mix all together for a short while
Now add salt, sugar and chicken stock and stir again followed by seasoning sauce continue stirring and add oyster sauce, continue stirring until mixed fairly evenly
Now add bell peppers, garden peas, sweet corn and pineapple and stir again until thoroughly mixed
Lastly add half the cashew nuts, stir once or twice and......
Done!
You just made Special Fried Rice
Serving:
Serving this dish is a simple affair, made to look lavish by the use of the hollowed out Pineapple for serving. Simply spoon the Special Fried Rice into the shell and serve up on the table as per the photo above for a lovely centrepiece your guests will admire, you could also add a couple of jasmine flowers of an orchid for a final flourish.
This dish can be quite happily eaten on it's own and will also accompany virtually any other dish; Thai or otherwise.
