 Lettuce and Pork Soup Recipe
   Jules's Blurb: I have just eaten this actual bowl of Lettuce and Pork soup.  It's a delicious, light, delicate flavoured, and filling low calorie soup so great as part of a calorie controlled diet.  A lovely fresh soup
 
    It falls into the category of "easy pork recipes" that Thais are famous for.... When you think about it how many pork soup recipes are there?

Lettuce Leaf Soup with Pork Recipe

(Tom Jued Pak Gaat Kao)

How To Make Pork and Lettuce Soup

 

Ingredients:Lettuce and Pork Soup Ingredients

Serves 2
200g Chopped Fresh Pork (minced)Thai Lettuce Leaf & Pork Soup Ingredients
2 Large Lettuce Leaves (Chinese or Iceberg)
2 Spring Onions (scallions)
2 Sprigs of Coriander
2 Cloves Garlic Chopped
1 ts Salt
2 tbs Thai Seasoning Sauce
1 Chicken Stock Cube
1 ts Pepper
2 Cups Water

 

Preparation:

Mix together chopped pork, chopped garlic, pepper and 1 tbs seasoning sauce leave to stand 15-30 minutes or so.
 
Wash spring onions and chop into about 1" long, chop coriander leaves together, (we use the stems also but keep them separate) and wash lettuce leaves, cut to about 1-2" square(ish)

Cooking:

Pour water into a saucepan and bring to boil.  When boiling, add coriander stems, salt, seasoning sauce, stock cube stir until dissolved
 
Coriander/cilantro stems can be eaten and give a lovely aroma and flavour to the soup stock
 
Take the pork and form into small balls (a bit less than 1") and place into boiling water leave to simmer for 4-5 minutes
 
Then add lettuce leaves boil until lettuce is soft
 
Then add spring onion, coriander stir 2-3 times, turn off heat because it's done!
 

 

Serving Suggestion:
