Stuffed Omelette With Pork

How to Make Pork Stuffed Omelette
Ingredients:
Menu for two people 
200g Pork Chopped (or minced/ground)
2 Eggs
1/2 cup Onion (chopped)
1 Tomato
1/2 Cup bell pepper (chopped)
2 Spring Onions
2 Cloves Garlic
1 tbs Fish Sauce
2ts Sugar
2tbs Oyster Sauce
1 tbs Thai Seasoning Sauce
1/2ts Pepper (freshly ground black is best)
1/2 Cup Oil
Preparation:
Chop or mince the pork, we chop lean pork, it gives a better texture and no fat

Cut, slice and chop onion, tomato, peppers mix together,
Chop spring onions into small logs (keep separate)
How to make the Filling:
Medium/high heat a wok containing the 2tbs of oil
Add garlic stir 10 seconds, starts to go golden, then add chopped pork stir until pork turns white and forms small balls, couple minutes at most
Then add onion, tomato, peppers, mix in and then...
Add the fish sauce, sugar, oyster sauce, stir fry for about 2 minutes and taste test, make adjustments if needed
When you're happy with the flavour, add spring onions, stir 3-5 times and turn off heat
Prepare the Omelette:
You can start before the filling is finished if you're reasonably competent in the kitchen 
Beat eggs in a bowl and mix in the seasoning sauce
Put 1/2 the remaining oil in a pan and heat until it almost smokes before pouring the beaten eggs in for 1-2 minutes see video
Lift the edge to check colour, when you're happy flip it over and repeat until done, you can turn it a couple of time to ensure an even colour both sides if you prefer
Lay it on a plate, cover half the omelette with the filling, sprinkle on the pepper and fold over to cover
