Pork Stuffed Omelette Recipe

Jules's Blurb:  I love this one, it is a meal in itself but we generally have it with a spicy curry and the omelette is shared as an extra with all at the table, to avoid the fight for the last pieces we over fill it.  It's great to have a tasty light (or spicy) soup with it

In Khwanjai's Thai cooking classes she shares lots of tips for creating mouth watering dishes to please all the family and this video tutorial is no different, packed with great tips and advice to improve your results, sign up now for Khwanjai's Thai cooking school  and your Trial Thai Banquet Course

(Kai Yat Sai Moo)

How to Make Pork Stuffed Omelette

Ingredients:

Menu for two people Pork Stuffed Omelette Recipe Ingredients

200g Pork Chopped (or minced/ground)
2 Eggs
1/2 cup Onion (chopped)
1 Tomato
1/2 Cup bell pepper (chopped)
2 Spring Onions
2 Cloves Garlic
1 tbs Fish Sauce
2ts Sugar
2tbs Oyster Sauce
1 tbs Thai Seasoning Sauce
1/2ts Pepper (freshly ground black is best)
1/2 Cup Oil

Preparation:

Chop or mince the pork, we chop lean pork, it gives a better texture and no fat

See how to make pork mince Thai style (public video)

Cut, slice and chop onion, tomato, peppers mix together,

Chop spring onions into small logs (keep separate)

How to make the Filling:

Medium/high heat a wok containing the 2tbs of oil

Add garlic stir 10 seconds, starts to go golden, then add chopped pork stir until pork turns white and forms small balls, couple minutes at most

Then add onion, tomato, peppers, mix in and then...

Add the fish sauce, sugar, oyster sauce, stir fry for about 2 minutes and taste test, make adjustments if needed

When you're happy with the flavour, add spring onions, stir 3-5 times and turn off heat

Prepare the Omelette:

You can start before the filling is finished if you're reasonably competent in the kitchen

Beat eggs in a bowl and mix in the seasoning sauce

Put 1/2 the remaining oil in a pan and heat until it almost smokes before pouring the beaten eggs in for 1-2 minutes see video

Lift the edge to check colour, when you're happy flip it over and repeat until done, you can turn it a couple of time to ensure an even colour both sides if you prefer

Lay it on a plate, cover half the omelette with the filling, sprinkle on the pepper and fold over to cover

Done!    You just learned how to make a Thai Stuffed Omelette

Serving Suggestions:

This is sweet and savoury, you can serve on it's own with Jasmine rice and tomato and chilli sauce on the side and some salad or......

This omelet recipe is most used as a support dish as part of a Thai meal to accompany something spicy.  Here's a couple of suggestions for you.  While you have the pork out, try our Pork Red Curry Recipe or maybe something rich and spicy like Dry Chicken Red Curry  it's not dry like the name implies, that's just the translation from Thai.  Another great dish to go with this is Tom Kaa Gai - Chicken Coconut Soup Recipe spicy, sweet and sour.   Fancy something more meaty?  Try our BBQ Spare Ribs Recipe or another great curry try our Chicken Yellow Curry Recipe
